Jack is my Uncle. Lucy is soon to be my Aunt. It’s been a long time coming.
I met Lucy when I was around 12 years old. I think. I suck at time frames. Lucy was working with my grandma at a cleaning service and was set up on a date with my Uncle Jack. Lucy and Jack hit it off well even though it seemed they would be polar opposites.
Lucy is from the Philippines. She can dig a hole in the ground and fill it with hot coals to create the most amazing, authentic Adobo or Lumpia that you’ve ever tasted. I’ve seen her pour a can of mountain dew over a pound of shrimp and saute them into a melt-in-your-mouth concoction worthy of bon appetite magazine.
Jack eats nothing. I’m not sure how he’s survived this long on french fries, Captain Crunch, and Kraft Macaroni and Cheese. He doesn’t eat meat, he doesn’t eat vegetables, he doesn’t eat fruits, and the closest thing to water he drinks is Sprite.
Jack and Lucy had planned to be married a long, long time ago. They’re plans were interrupted when Lucy received word that her father was ill at home in the Philippines. She went home to be with him as he approached the end of his time and wouldn’t you know it, he stuck around for another 10 years.
Lucy couldn’t bear to leave her father in his condition, and though she kept in some contact with Jack over the years, she never returned to the United States…until a couple months ago. Lucy’s father has passed away and her familial obligations have come to a close. She and Jack had been in contact together for some time and after Jack decided to visit Lucy in the Philippines, it was set.
They had decided that after all these years apart, it was time to be back together. They knew that they were right for one another. And so Lucy has moved back. They are to be married soon and they’ve asked me to officiate their wedding. It’s exciting and surreal.

Love is patient…. love never fails. Love is what makes the world go round. I love love stories. Engagement stories, weddings, baptisms, *sigh*, just makes me all teary eyed and reminiscent of what we were made for. Made to love.

You had me at lumpia. That is a seriously sentimental food for me in addition to being one of my favorite things to eat EVER. Add that to one of the sweetest love stories I’ve heard and it makes one very compelling tale. Sigh. Now I want to hug my husband AND make some lumpia. Good thing he loves them, too.

I think your Uncle Jack is really my step-son in disguise. He’s a 30 year old bachelor who lives on frozen cheese pizza, canned chili (no beans variety), spaghetti noodles with plain tomato sauce on top, and soda. The last time I saw the boy drink water was….well, never actually. He refuses to eat vegies, the only potatoes he eats are french fries (and only if they’re not too potato-y), and he absolutely loathes onions. On the plus side though, he LOVES Skyline chili and hot sauce.
