
* Pasta of choice
* 2 tbsp. Butter
* 1 cup Coconut Milk
* 3/4 cup Swiss Cheese
* Salt, Pepper, Herbs, and Garlic to taste
While pasta is boiling, melt butter in saucepan. Once butter is melted, add in coconut milk and cheese. Whisk together until cheese is melted and a creamy sauce is achieved. Add salt, pepper, herbs of choice, and a little garlic powder or sauteed garlic – if you’re into that sort of thing. Sauce should easily cover 8-12oz. of pasta.
Lunch today – amazing.

Well…I missed my first day of blogging in a couple weeks yesterday. It was so worth it!
Get this – we did it. No, not that. We actually…take a deep breath…left the house. It was risky, and our legs were a little shaky. The bedsores were a bit tender, but we set our sights, packed our house into large bags, and we explored the outside world. Yesterday was the first Cincinnati Reds game we’ve ever been to as an entire family. We witnessed history as the Redlegs advanced to a 5-0 winning streak. The best part was having my kids with me to see it. Well, that and the cheese fries.


Once we had the taste of outdoor happenings in our mouth, we decided to make a run for it and headed over to the Cincinnati Zoo for Tunes and Blooms tonight. Good music. Good conversations. Good beer. Even the number of hipsters present couldn’t get me down.

I am not sure if Ava liked it though. I can’t tell…

Today was a seriously momentous occasion. The class at Ava’s preschool was celebrating her birthday. Shamefully, all I have to show from the event are these two terrible photos I took with my phone.


What kind of parent doesn’t bring his good camera to such an incredible celebration? The kind who doesn’t care too much about fake birthday parties. Ava’s birthday is in August. Since the preschool wants to celebrate everyone’s birthday – she got to pick a random day and April 5th it was. Birthday kids (even non-birthday, birthday kids) are celebrated by having their parents show up with a special snack and then the parents read a couple of books to the class.
Allison and I brought little cups of Ice Cream and Yoohoo drink boxes. We know what kids like. All of the preschoolers crushed their birthday party snacks and then we headed over to story time. My lovely bride kicked things off with the reading of “The Very Quiet Cricket” and then I brought down the house with a dramatic presentation of “The Grouchy Ladybug”.
Kids still like you when they’re 4 years old. Ava really, really likes us. Even when we upset her or hurt her feelings, she forgets about it and likes us 5 minutes later. She was beaming with pride while we were there for her birthday party. It made me really wish I had my real camera with me. Happy fake birthday Ava…it was great to be there for you.
